  • It yields tender, flavorful, and flaky grilled mahi mahi. The grill is incredible for many reasons! One being that it gives this firm white fish a gorgeously charred exterior and a soft interior. This recipe is for anyone looking for perfectly cooked and seasoned mahi mahi!
  • It’s ready in under 15 minutes! Toss your mahi mahi in a simple marinade, then throw it on the grill for just a few minutes per side. You can easily toss some fresh veggies on the grill too for a complete and healthy meal.

Key Ingredients

Mahi Mahi – You can find this firm white fish at most grocery stores. Located at either the seafood counter or in the freezer aisle. Mahi mahi has a distinct mild and almost sweet flavor, that pairs beautifully with a variety of seasonings. I prefer to keep the seasoning light, as to not overwhelm this delicate fish. You have the option to either remove or leave the skin on your mahi mahi before grilling. I chose to leave the skin on since it contributes just a touch more flavor to the overall dish!

Lemon Juice – While bottled lemon juice will work, fresh is always best! Just a touch of citrus goes a long way in bringing out the freshness of this dish. Though since lemon juice is acidic, it will begin to cook the fish if left in the marinade for too long (which is how ceviche is made!). To avoid this, simply toss the fish in the marinade to coat. Let is sit for just a few minutes and then transfer it to the grill to cook completely.

Chef’s Tips

  • Wait until the mahi mahi naturally releases from the grill grates before flipping! Avoid the urge to touch, move, or poke the fillets until they’re hot enough to release on their own. If you attempt to flip the fish too early, you risk it sticking to the grill and falling apart while cooking.
  • Bring your grill to temperature before cooking this grilled mahi mahi. If the grill is not hot enough, you will run into the same issue I noted above – sticking and falling apart. Patience is key here, though even waiting the extra few minutes will still keep this entire process under 15 total minutes!
  • Feel free to add any additional spices you’d like! I prefer to keep things simple for this mild tasting fish, though you can easily make this recipe your own. A dash of garlic powder, dried herbs, or even some smoked paprika would taste delicious in addition to the existing spices in this recipe.

Ingredients

  • 4 mahi mahi fillets see Notes
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice see Notes
  • 1 teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • Preheat your grill to medium-high heat.
  • Mix together the olive oil, lemon juice, salt and black pepper in a bowl then add in the mahi mahi and toss to coat.
  • Place each filet on the grill and cook for 3-5 minutes per side or until opaque throughout.
  • Mahi Mahi: Either fresh or frozen then defrosted mahi mahi will work in this recipe. You also have the option to leave the skin on or remove the skin before cooking.
  • Lemon Juice: You can use fresh lime juice instead of lemon juice if you’d like!
