This sweet strawberry vinaigrette is the perfect salad dressing for spring and summer! Made with just 4 ingredients – including fresh or frozen strawberries – and ready in as little as 5 minutes, so it’s great for last-minute lunches or sudden cravings. One bite of this beautiful dressing will make you forget all about the store-bought stuff!

🍓 What Makes This Recipe So Good

  • I know grabbing a bottle of strawberry vinaigrette at the grocery store is super convenient, and I’m all for convenience! But trust me when I tell you that those store-bought vinaigrettes don’t compare to the incredible flavor in this easy homemade version. Fresh strawberries lightly sweetened with honey; fruity, buttery olive oil; the bright tanginess of apple cider vinegar; a little pop of salt and pepper.
  • Making strawberry vinaigrette at home is SO ridiculously easy. Literally pop everything in the blender and blend until smooth. You can make it year-round, too, by using frozen strawberries instead of fresh.
  • While I love strawberry vinaigrette on a bed of fresh, crisp spinach with crumbled feta and toasted pecans, it’s amazing on other dishes, too! Drizzle it over grilled chicken on a bed of brown rice or quinoa, or use the vinaigrette as a marinade for pork tenderloin before tossing it on the grill.

👩🏼‍🍳 Chef’s Tips

  • For a softer, less intense flavor, blend in a small amount of water until the vinaigrette tastes how you like it. Just be careful not to use too much water. You don’t want a runny, watery dressing.
  • If you don’t have a blender, you can use a food processor instead. You can also go with the tried-and-true method of whisking by hand. Just make sure you chop the strawberries very, very finely. You’ll end up with small chunks of strawberry in the vinaigrette, of course, but it’ll still taste delicious!
  • Using frozen strawberries? Defrost them overnight in the fridge first! If you blend the strawberries while they’re frozen, your vinaigrette won’t have the right consistency.

For the Strawberry Vinaigrette

Instructions

  • Add 1 cup fresh strawberries, 1 tablespoon honey, 2 tablespoons apple cider vinegar, and 2 tablespoons high-quality olive oil to blender. Secure lid on blender and blend ingredients together until smooth.
  • Once smooth, taste mixture and add salt and freshly cracked black pepper to taste. Replace lid on blender and blend mixture to incorporate salt and pepper.
  • When mixture is completely smooth and all ingredients are well-blended, transfer vinaigrette to serving vessel and serve immediately. Alternately, transfer vinaigrette to airtight container and refrigerate until ready to serve.
  • Strawberries: For a year-round vinaigrette, you can use frozen strawberries instead of fresh. Defrost them overnight before using them in your vinaigrette, otherwise the ingredients won’t blend smoothly.
  • Intensity: If the flavors are a little too intense for you, blend in a little water to soften them to your taste! Just don’t overdo it or you’ll end up with a runny, watery vinaigrette.
  • Leftovers: Refrigerate leftover strawberry vinaigrette in an airtight container up to 3 weeks. If any settling occurs, shake or whisk the mixture to reincorporate. If the olive oil thickens, bring the vinaigrette to room temperature before serving.
