Add 1 cup fresh strawberries, 1 tablespoon honey, 2 tablespoons apple cider vinegar, and 2 tablespoons high-quality olive oil to blender. Secure lid on blender and blend ingredients together until smooth.
Once smooth, taste mixture and add salt and freshly cracked black pepper to taste. Replace lid on blender and blend mixture to incorporate salt and pepper.
When mixture is completely smooth and all ingredients are well-blended, transfer vinaigrette to serving vessel and serve immediately. Alternately, transfer vinaigrette to airtight container and refrigerate until ready to serve.
Recipe Notes
Strawberries: For a year-round vinaigrette, you can use frozen strawberries instead of fresh. Defrost them overnight before using them in your vinaigrette, otherwise the ingredients won't blend smoothly.
Intensity: If the flavors are a little too intense for you, blend in a little water to soften them to your taste! Just don't overdo it or you'll end up with a runny, watery vinaigrette.
Leftovers: Refrigerate leftover strawberry vinaigrette in an airtight container up to 3 weeks. If any settling occurs, shake or whisk the mixture to reincorporate. If the olive oil thickens, bring the vinaigrette to room temperature before serving.
