Pan fried or grilled chicken breasts are served with a delicious bruschetta topping spooned over the top for the ultimate one pan bruschetta chicken recipe! Using just a handful of simple ingredients and ready in just under 30 minutes, this is the perfect chicken breast recipe for summer.
Why This Recipe is So Good
- For a light meal all you have to do is serve it with bread or a green salad (if you want to keep this meal low carb!), but you can also bulk this easy tomato chicken dish out by making some Sauteed Zucchini, Roasted Radishes, a Red Potato Salad, some Parmesan Truffle Fries or a simple Zucchini Salad!
- It’s super quick and easy to make. You can chop the tomatoes and stir together the bruschetta topping while the chicken breasts cook.
- You can choose to grill or pan fry the chicken, whatever works for you!
Chef’s Tips
- I get it, I know you’re hungry and want to dig in immediately. But let that chicken rest for the full 5 minutes after cooking. This is what separates juicy, restaurant-quality chicken from the dry, disappointing stuff. Those juices need time to redistribute. Trust me here; it’s worth the wait!
- Pull the chicken out at 161-162ยฐF. It’ll coast to that perfect 165ยฐF while resting. This one step will save you from ever serving overcooked, rubbery chicken again.
- Here’s a secret tip that’ll change your bruschetta game. If you’ve got 15 to 20 minutes before serving, toss the diced tomatoes with salt first. Let them drain in a colander. You’ll be amazed at how much excess water comes out. The flavor becomes so much more concentrated. No more soggy, watery bruschetta!
Recipe Variations
- Roma tomatoes are the best tomatoes to buy for this bruschetta chicken if you’re getting them at the store, but if you’re heading to the farmers market or you grow your own, any slightly firm heirloom tomato that holds its shape when chopped will work here.
- To make this into Caprese Chicken, stir a ball of torn mozzarella into the bruschetta mixture.

Bruschetta Chicken
Ingredients
- 4 Roma tomatoes seeded and diced
- 3 cloves garlic minced
- 2 tablespoons olive oil
- 2 teaspoons balsamic vinegar
- 2 tablespoons fresh basil chopped
- 1 teaspoon salt
- ยผ tablespoons fresh cracked pepper
For the Chicken
- 4 medium chicken breasts uniformly sized
- 1 tablespoon salt and pepper
- 2 tablespoons avocado oil or vegetable oil
Instructions
- Stir together all the bruschetta ingredients in a medium bowl and set aside. If desired, gently pour out excess liquid after a few minutes, if the tomatoes are very watery.
- Season both sides of the chicken generously with salt and pepper.
- Stovetop: Heat 2 teaspoons if oil over a medium heat. Gently add the chicken breasts to the skillet without overcrowding. Cook the first side for 8 minutes without moving. Flip the chicken breasts and cook second sides for 2-4 minutes, or until cooked through, about 161-162ยบ F internal temperature. Transfer to a plate and let rest 5 minutes.
- Grill: Preheat the grill to medium-high heat, about 375-400 degrees F. Brush the grill with avocado or vegetable oil. Grill the chicken for about 8-10 minutes per side, or until fully cooked through. Transfer to a plate and let rest 5 minutes.
- After resting the chicken breasts for 5 minutes, transfer the chicken to serving plates, and top generously with bruschetta. Garnish with the basil.
