- Keep that sugar, butter, and milk mixture at a rolling boil for one minute! know it’s tempting to hurry things along, but this step is absolutely crucial for getting cookies that actually set up properly. Skip this, and you’ll end up with a gooey mess instead of chewy, perfect cookies.
- You could use almond, cashew, or sunflower seed butter instead of peanut butter, but ensure it has a similar consistency to regular smooth peanut butter. Trying to use one that’s not similar may result in an inconsistent texture or overly soft cookies. Believe me, nobody wants that!
- This recipe is pretty adaptable, so you could also add mini chocolate chips for an extra treat, or sprinkle some flaky sea salt on top of each cookie for a sweet-salty hit. Obviously, don’t do this if your peanut butter is quite salty.

Peanut Butter Oatmeal No-Bake Cookies
Equipment
- baking sheet
- Wax paper
Ingredients
- 1 ยฝ cups brown sugar
- ยฝ cup butter
- ยฝ cup milk
- 1 cup smooth peanut butter
- 3 cups old fashioned oats
- 1 teaspoon vanilla
- pinch salt
Instructions
- Cover a baking sheet with wax paper and set aside.
- In a large saucepan over medium heat, stir together sugar, butter and milk. Bring to a boil, stirring frequently and keep at a rolling boil for one minute.
- Turn off the burner and stir in peanut butter until smooth. Stir in vanilla and oats until combined, along with a pinch of salt.
- Scoop 2-tablespoon portions of cookie mix onto the baking sheet lined with wax paper. Leave space between each scoop to allow for the cookies to spread, but they shouldnโt spread much.
- Pop the baking sheet of cookies into the fridge and let them chill for an hour or so, until theyโre firm. Enjoy your cookies chilled or at room temperature!
