Peanut Butter Oatmeal No-Bake Cookies

With this super easy No-Bake Peanut Butter Oatmeal Cookie recipe you're only 7-ingredients away from a delicious sweet treat that can be enjoyed at any time of day!

Equipment

  • Wax paper

Ingredients

  • 1 ½ cups brown sugar
  • ½ cup butter
  • ½ cup milk
  • 1 cup smooth peanut butter
  • 3 cups old fashioned oats
  • 1 teaspoon vanilla
  • pinch salt

Instructions

  • Cover a baking sheet with wax paper and set aside.
  • In a large saucepan over medium heat, stir together sugar, butter and milk. Bring to a boil, stirring frequently and keep at a rolling boil for one minute.
  • Turn off the burner and stir in peanut butter until smooth. Stir in vanilla and oats until combined, along with a pinch of salt.
  • Scoop 2-tablespoon portions of cookie mix onto the baking sheet lined with wax paper. Leave space between each scoop to allow for the cookies to spread, but they shouldn’t spread much.
  • Pop the baking sheet of cookies into the fridge and let them chill for an hour or so, until they’re firm. Enjoy your cookies chilled or at room temperature!

Recipe Notes

At room temperature these cookies will keep in an air-tight container for up to 3 days, or in the refrigerator for up to a week. You can also freeze them for up to a month.
