I first had a blueberry mojito at a swanky bar downtown and was surprised by how well the mint, lime, and blueberries worked together. I’m not typically a rum fan, but I could hardly taste it in the drink, just an understated complexity of flavor that was at the same time simple and satisfying. I knew I had to recreate.

But you know when you have such high expectations for something… and you DIY and it’s nothing like you’d dreamed?

That did NOT happen here.

No, I had a single sip, after clearing my little photo setup, and suddenly became really worried that the photos would be good enough. I knew I absolutely had to share this with you guys! Not only is the recipe incredibly simple, it’s fruity and aromatic, boozy but not “stiff”. Perfect, perfect, perfect for summer. Perfect for entertaining. Vibrant and festive for 4th of July.

You’ll looooove this. Promise.

Blueberry Mojitos

Blueberry mojitos - simple and delicious. The perfect summer cocktail

Ingredients

  • 8 blueberries
  • 2 lime (total 1/4 lime)
  • 5 mint
  • 3 ounces white rum
  • 1.5 ounces simple syrup*
  • 2 tbsp soda , to taste
  • 3-4 blueberries , for garnish, optional
  • 2-3 mint leave , for garnish, optional

Instructions

  • Place blueberries, lime, and mint in the bottom of a tall glass and muddle. Add rum, simple syrup, and soda, and stir. Add soda to taste. Garnish with more blueberry and mint leaves, if desired.
To make simple syrup, combine 1 cup sugar and 1 cup water. Bring to a boil, stir to make sure all sugar is dissolved, and remove from heat. Let cool.
