Your favorite brunch beverage is getting an autumn makeover thanks to this perfect recipe for apple cider mimosas. Made with as few as 3 ingredients, they’re a simple, festive, delicious cocktail to enjoy while watching the Thanksgiving parade or snacking on holiday appetizers.
What Makes This Recipe So Good
- When I tell you this is a favorite of mine, I’m absolutely NOT exaggerating. I’ve been making these for years – they may or may not have been the signature cocktail at my oldest son’s 2nd birthday party (don’t mind me as I think about how we just had his 7th birthday party a couple of months ago). Anyway, that should tell you how amazing these mimosas are!
- This recipe takes the classic mimosa recipe and turns it into a crisp, refreshing cocktail that fully embraces all of the goodness of fall. The drink itself is made up of just 3 ingredients – delicious apple cider, bubbly sparkling wine, and warm cinnamon whiskey. We go a step further, though, rimming the glasses with rich maple syrup and cinnamon sugar, and then garnishing the drink with apple slices and cinnamon sticks. Those are all optional, though. If you don’t feel like being that extra with your mimosas, don’t worry – they’ll taste just as amazing without all of that.
- Whether you dress up the glasses or not, this recipe couldn’t be easier to make. Seriously. Just dump all the liquids into a pitcher, stir, and serve. That’s it. Since it’s so easy, you can also scale it up to accommodate a big group with no problem. Perfect for holiday parties, Christmas brunch, or Thanksgiving-morning chaos.
Chef’s Tips
- If you want to cut back on the alcohol a little, you can get the same deliciously cinnamony apple cider mimosas without using any cinnamon whiskey. Just use a few drops of food-grade cinnamon essential oil instead!
- What sparkling wine should you use for mimosas? Use something dry since you’re combining it with sweet apple cider – prosecco, cava, and champagne are all great options. Also, leave the expensive stuff for another time. Since you’re mixing the wine with other ingredients, a mid-range will work perfectly.
- I don’t recommend preparing the mimosas in advance. The sparkling wine can go flat which will make the whole drink taste off. If you want your mimosas really cold, chill your wine and apple juice ahead of time, and serve the drinks immediately after mixing them.
- For a really over-the-top gourmet flavor, infuse your apple cider with whole cinnamon sticks and sprigs of fresh rosemary at least 12 hours before preparing the mimosas. Infusing is simple, by the way. All you need to do is pour the apple cider into the pitcher you plan to use, add rosemary and cinnamon sticks, give it a quick stir, and then put the pitcher in the fridge. Now let it sit 12 hours (up to 24 hours) before making the recipe as written below!

Apple Cider Mimosas
Equipment
- large pitcher
- long-handled wooden spoon
- 2 shallow dishes or bowls slightly larger than top of flutes, optional
- small whisk or spoon, optional
- champagne flutes stemmed or stemless
- funnel optional
Ingredients
For the Apple Cider Mimosas
- 1 750-milliliter bottle dry sparkling wine chilled, see Notes
- 1 32-ounce bottle organic apple cider chilled
- ¼ cup cinnamon whiskey plus more to taste
For the Cinnamon Rim (Optional)
- 1 tablespoon granulated sugar or brown sugar
- 1 teaspoon cinnamon
- 1-2 tablespoons pure maple syrup
Suggested Garnishes (All Optional)
- 1 medium apple any variety, sliced into thin discs or wedges
- sprigs of fresh rosemary
- whole cinnamon sticks
Instructions
For the Apple Cider Mimosas
- Pour bottle of sparkling wine and bottle of apple cider into large pitcher. Add ¼ cup cinnamon whiskey and stir until liquids are well-mixed. Taste mixture and add more whiskey as needed. Set pitcher aside.
For the Cinnamon Rim (Optional)
- Add sugar and cinnamon to shallow dish. Whisk until ingredients are well-incorporated. Set dish aside.
- Pour maple syrup into second shallow dish.
To Serve
- Invert one champagne flute and dip rim of glass directly into shallow bowl of maple syrup, making sure rim of glass is well-covered.
- Hold champagne flute over bowl 2 to 3 seconds to allow excess maple syrup to drip back into bowl, then place rim of glass directly into bowl of cinnamon sugar mixture. Twist and roll rim of glass in cinnamon sugar to coat well.
- Repeat until rims of all champagne flutes have been dipped in maple syrup and cinnamon sugar.
- To easily fill glasses, insert funnel into glasses one by one and pour mimosas from pitcher through funnel, to prevent liquid touching cinnamon sugar rim. Repeat until all glasses have been filled.
- Garnish each glass with apple slices, sprigs of rosemary, and cinnamon sticks if desired. Serve chilled.
- Dry Sparkling Wine: Opt for a mid-range prosecco, cava, or champagne.
- Make it Non-Alcoholic: Replace the sparkling wine with sparkling white grape juice. Omit the cinnamon whiskey and use drops of food-grade cinnamon essential oil to taste.
For a Single Apple Cider Mimosa
- Mix sparkling wine and apple cider together, using slightly more apple cider than wine. Add cinnamon whiskey to taste and stir well to combine.

Hello! I clicked on your Cinnamon Apple Cider Mimosa drink that I made for Halloween, which was such a hit. I have requests to make again at Thanksgiving. But for some reason, the link takes me to this Apple Cider Mimosa in a flute glass recipe that is a bit different. Did you combine recipes?
No, we just updated the post! The recipe didn’t change at all, it’s the same cinnamon apple cider mimosa you loved at Halloween. 🙂
