What is Burrata?

Burrata is a rich Italian cheese and it is absolutely wonderful. Like a Lindor truffle made of cheese instead of chocolate, it’s essentially a ball of mozzarella with a creamy core of stracciatella – a mixture of cream and cheese curd.

Can you serve burrata warm?

Definitely! It’s a valid question – burrata is generally served at room temperature. And it’s delicious at room temperature. So much so that most baked burrata recipes will tell you to bake the marinara (or roast tomatoes) by itself first, then just plop the fresh burrata into the warm marinara.

I love it that way, but baking the cheese for just a few minutes softens up the outer layer of mozzarella and makes the burrata delightfully gooey.

Before You Get Started

  • Burrata is kind of a big deal to this baked burrata recipe, so it’s important that you choose a good one! The main thing to look for is freshness. Burrata doesn’t keep long, and older burrata can have a bitter or sour flavor and a rubbery texture. The mozzarella shell should be shiny, with no cracks or tears, and should feel a little firm but mostly soft.

What I Love About This Recipe

  • Baked burrata is SO ridiculously easy to make, but it tastes and feels a little extravagant. Part of that is thanks to the incredible burrata, and part of that is because of the complex, bold, luxurious truffle oil.
  • For this baked burrata, you’ll only need 4 ingredients plus sea salt and an optional garnish. Simple, budget-friendly, and practically effortless. I’ve also included a super easy homemade crostini recipe, but you’re welcome to buy pre-made crostini rather than making your own.
  • It comes together in roughly 15 minutes, and that includes making the crostini. Great for last-minute guests or a quick appetizer for cocktail hour.

Recipe Variations

  • No Burrata? No Problem!: If you can’t find fresh burrata, fresh mozzarella will work instead. It won’t have quite the same creaminess as burrata, but it’s still delicious!
  • Choose Your Vessel!: Crostini is my match-of-choice for baked burrata, but these air fryer pasta chips would be a great option, too! They’re super easy to make and they’ve got a wonderfully crunchy texture.

Warm Truffle Baked Burrata with Crostini

Simple but oh-so-impressive, this warm, savory cheese-and-tomato appetizer comes together in just 15 minutes.

Equipment

  • Oven
  • large baking sheet
  • parchment paper
  • large bread knife
  • Pastry brush or basting brush
  • small cast-iron skillet or small baking dish

Ingredients

For the Crostini

  • 1 16-ounce baguette
  • high-quality olive oil 23 tablespoons, plus more as needed
  • kosher salt to taste

For the Truffle Baked Burrata

  • 1 cup marinara sauce store-bought or make your own
  • 1 8-ounce ball fresh burrata
  • ¼ cup grated fresh parmesan
  • 1 tablespoon truffle oil

Serving Suggestions (All Optional)

  • sea salt flake salt preferred, to taste
  • thinly sliced fresh basil

Instructions

  • Preheat oven to 400° Fahrenheit and adjust oven rack to center of oven if needed. Line large baking sheet with parchment paper. Set aside.
  • Slice 1 16-ounce baguette into diagonal pieces, each piece no wider than ½ inch maximum. Arrange baguette slices on baking sheet in single layer without overlapping.
  • Brush tops of baguette slices with high-quality olive oil, then lightly sprinkle kosher salt over baguette slices. Flip slices over and repeat on other side. Set aside.
  • Add 1 cup marinara sauce to small cast-iron skillet or other small baking dish.
  • Nestle 1 8-ounce ball fresh burrata in center of marinara, then sprinkle ¼ cup grated fresh parmesan evenly over burrata and marinara.
  • Place baking sheet and skillet in preheated oven. Bake crostini and burrata 6 to 8 minutes or until edges of crostini are golden and marinara is bubbly.
  • Carefully remove baking sheet and skillet from oven and set aside. Drizzle 1 tablespoon truffle oil evenly over top of burrata.
  • Transfer crostini to serving plate or bread basket. Sprinkle sea salt and thinly sliced fresh basil over top of burrata and serve immediately with crostini.
  • Crostini: Number of crostini made from 1 baguette will depend on thickness of slices.
  • Parmesan: For the best flavor and melt, grate your own fresh parmesan from a block rather than using prepackaged grated parm.

Can I use a different cheese?

Yes! If you can’t find fresh burrata, fresh mozzarella would be the next-closest option. The flavor and consistency will be a little different, but it’ll be delish!

Can I make baked burrata ahead of time?

Sort of. You can prep the baked burrata in advance, but I recommend waiting to actually bake it until right before you intend to serve it. It’s best when it’s fresh!

Can I freeze baked burrata for later?

Technically, but I don’t recommend it. After baking, cooling, freezing, and reheating the cheese, you may find the texture and flavor a little unpleasant. This dish is best when it’s enjoyed right after it’s made!
