Ingredients
- 1 can cream of chicken soup
- ยฝ cup cottage cheese
- ยฝ cup sour cream
- 4 ounces cream cheese at room temperature
- 2 teaspoons Cajun seasoning
- 1 teaspoon onion powder
- 1 ยฝ teaspoons garlic powder divided
- 2 teaspoons dried parsley
- ยฝ cup sliced scallions reserve 2 tablespoons for garnish
- 5 cups shredded rotisserie or cooked chicken
- 1 can corn drained well
- 30 buttery round crackers such as Ritz, crushed
- 4 tablespoons unsalted butter melted
- 1 cup shredded mozzarella cheese
Instructions
- Preheat the oven to 350ยฐF (175ยฐC).
- Stir 1 can cream of chicken soup, ยฝ cup cottage cheese, ยฝ cup sour cream, 4 ounces cream cheese, 2 teaspoons Cajun seasoning, 1 teaspoon onion powder, 2 teaspoons dried parsley, and 1 teaspoon of the garlic powder in a medium bowl until well blended and smooth.
- Fold in 5 cups shredded chicken, 1 can drained corn, and ยฝ cup sliced scallions (except 2 tablespoons) until evenly coated.
- Combine 30 crushed crackers, 4 tablespoons melted butter, and remaining ยฝ teaspoon garlic powder in a medium bowl.
- Spoon chicken mixture evenly into an 11×7-inch or 9-inch square baking dish. Sprinkle evenly with 1 cup mozzarella cheese then top with cracker mixture.
- Place on a foil-lined baking sheet and bake in the preheated oven until crackers are golden brown and edges are bubbly, about 35 minutes. Garnish with reserved 2 tablespoons scallions, if desired.
