Equipment

  • Oven
  • Handheld mixer or stand mixer
  • Large bowl
  • Silicone spatula
  • 6" cast-iron skillet

Ingredients

  • 5 tablespoons butter softened
  • 6 tablespoons Brown Swerve
  • 2 tablespoons granular Swerve
  • 1 ½ cups almond flour
  • ¼ teaspoon baking soda
  • â…› teaspoon salt
  • ½ tablespoon vanilla extract
  • 1 egg
  • ½ cup keto chocolate chips

Instructions
 

  • Preheat oven to 350° Fahrenheit.
  • Using hand mixer or stand mixer on high speed, beat together softened butter, Brown Swerve, and Granular Swerve in large bowl until mixture is light and fluffy.
  • Add almond flour, baking soda, salt, vanilla, and egg. Beat on medium speed until all ingredients are well incorporated.
  • Using silicone spatula, gently fold chocolate chips into keto cookie dough.
  • Press chocolate chip cookie dough into cast-iron skillet. Place skillet in preheated oven and bake 23-25 minutes until center is set (but still a little a wobbly) and edges are golden brown.
  • Remove from oven. Let cool in skillet at least 5 minutes, then top with keto ice cream and serve warm.
  • Chocolate Chips: You can use semisweet, dark, or milk keto chocolate chips. I used ½ cup Lily’s 55% Dark Chocolate Chips.
