This keto skillet cookie is moist, rich, dense, and gooey... and super low in carbs! It's easy to prepare, and you'll be the family dessert hero when you make this low carb treat.

Equipment

  • Oven
  • Handheld mixer or stand mixer
  • Large bowl
  • Silicone spatula
  • 6" cast-iron skillet

Ingredients

  • 5 tablespoons butter (softened)
  • 6 tablespoons Brown Swerve
  • 2 tablespoons granular Swerve
  • 1 ½ cups almond flour
  • ¼ teaspoon baking soda
  • teaspoon salt
  • ½ tablespoon vanilla extract
  • 1 egg
  • ½ cup keto chocolate chips

Instructions

  • Preheat oven to 350° Fahrenheit.
  • Using hand mixer or stand mixer on high speed, beat together softened butter, Brown Swerve, and Granular Swerve in large bowl until mixture is light and fluffy.
  • Add almond flour, baking soda, salt, vanilla, and egg. Beat on medium speed until all ingredients are well incorporated.
  • Using silicone spatula, gently fold chocolate chips into keto cookie dough.
  • Press chocolate chip cookie dough into cast-iron skillet. Place skillet in preheated oven and bake 23-25 minutes until center is set (but still a little a wobbly) and edges are golden brown.
  • Remove from oven. Let cool in skillet at least 5 minutes, then top with keto ice cream and serve warm.

Recipe Notes

  • Chocolate Chips: You can use semisweet, dark, or milk keto chocolate chips. I used ½ cup Lily's 55% Dark Chocolate Chips.
