Equipment

  • Large wooden serving board or platter 16-20 inches diameter
  • Sharp knife
  • Cutting board
  • Small bowl
  • Wooden honey dipper
  • Small prep bowls

Ingredients

For the Turkey Centerpiece

  • 1 large red pear or Bosc pear
  • 1 to 2 red apples thinly sliced
  • 1 small triangle white cheddar or mozzarella cheese
  • 2 whole cloves or black peppercorns
  • 8 to 10 fresh sage leaves
  • ยผ cup fresh cranberries

Cheeses (12 to 16 Ounces Total)

  • 6 ounces white cheddar or Havarti cheese, sliced
  • 4 ounces sharp orange cheddar cheese sliced
  • 4 ounces aged cheddar or Gouda cheese, cubed

Meats (8 to 12 Ounces Total)

  • 6 ounces pepperoni or hard salami slices
  • 4 ounces dry salami slices

Crackers

  • 2 cups pretzel thins
  • 1 ยฝ cups everything bagel crackers or multigrain seeded crackers
  • 1 ยฝ cups round butter crackers or water crackers

Fruits

  • 2 cups fresh blueberries
  • 1 cup fresh cranberries
  • 1 red apple thinly sliced

Garnishes and Extras

  • 4 to 6 fresh rosemary sprigs
  • 12 to 15 additional fresh sage leaves
  • ยฝ cup pecan halves
  • ยผ cup honey
  • ยฝ cup pomegranate arils optional

Instructions
 

Create the Turkey Centerpiece

  • Place 1 large pear in the center of your 16 to 18-inch wooden board, narrow end forward as the turkey's head.
  • Cut a small triangle (approximately ยฝ inch on each side) from white cheddar or mozzarella cheese. Use a small dab of honey as "glue" to attach the cheese triangle to the narrow end of the pear for the beak.
  • Dip the end of 2 whole cloves in honey, then press into the pear just above the beak to create the eyes.
  • Slice 1 to 2 red apples into thin slices (approximately โ…› inch thick). Arrange 8 to 10 apple slices in a fan shape behind the pear, overlapping each slice to create tail feathers.
  • Tuck 6 to 8 fresh sage leaves between and around the apple slices throughout the tail.
  • Scatter a few fresh cranberries around the turkey and in the tail feathers.

Build Outward โ€“ Meat Ring

  • Fold and arrange 6 ounces pepperoni or hard salami slices and 4 ounces dry salami slices in a ring around the turkey centerpiece, alternating between varieties and overlapping them to create the first layer.

Build Outward โ€“ Cheese Ring

  • Layer 4 ounces sliced orange cheddar cheese in the next ring outward in an overlapping pattern.
  • Add 6 ounces sliced white cheddar or Havarti cheese next to the orange cheddar, overlapping slightly.
  • Scatter 4 ounces cubed aged cheddar or Gouda cheese in this same ring.

Build Outward โ€“ Cracker Rings

  • Arrange 1ยฝ cups round butter crackers in the next ring inward, stacking or fanning them.
  • Add 2 cups pretzel thins in the next ring, overlapping them.
  • Place 1ยฝ cups seeded or everything bagel crackers in clusters in this same ring.

Build Outward โ€“ Apple Ring

  • Arrange 1 thinly sliced red apple in overlapping slices to form the next ring inward from the berries.
  • Tuck 4 to 6 fresh sage leaves between the apple slices.

Build the Outer Ring โ€“ Berries

  • Arrange 2 cups fresh blueberries in a ring around the outer edge of your 16 to 18-inch wooden board.
  • Scatter 1 cup fresh cranberries throughout the blueberries.
  • Tuck 4 to 6 fresh rosemary sprigs into the berry mixture, spacing evenly around the board.

Final Garnishes

  • Scatter remaining fresh cranberries (from the ยผ cup reserved) around the turkey and in the tail feathers.
  • Create 2 to 3 small clusters using ยฝ cup pecan halves near the bottom of the board.
  • Place a small wooden bowl filled with ยผ cup honey near the pecans. Add a wooden honey dipper to the bowl.
  • If using, scatter ยฝ cup pomegranate arils around the board between ingredients.
  • Add remaining sage leaves (approximately 6 to 9 from the 12 to 15 total) to fill any gaps.
  • Cover loosely with plastic wrap and refrigerate up to 4 hours if not serving immediately. Remove from refrigerator 30 minutes before serving.
Storage: Do not leave assembled board at room temperature for more than 2 hours for food safety. Store leftover cheeses and meats separately in airtight containers in the refrigerator for up to 3 days. Crackers should be stored separately at room temperature to maintain crispness.
Make Ahead: Assemble everything except apple slices, fresh herbs, and honey up to 4 hours before serving. Cover tightly with plastic wrap and refrigerate. Add apples (tossed with lemon juice), fresh herbs, and honey 30 minutes before guests arrive.
Apple Browning Prevention: Toss apple slices gently with 1 tablespoon lemon juice mixed with 2 tablespoons water. Pat dry before arranging. Prepare no more than 1 hour before serving for best appearance.
Serving Temperature: Remove board from refrigerator 30 minutes before serving to bring cheeses to room temperature for optimal flavor and texture.
