The best kale chips you’ll ever have! They’re crispy and light with the most amazing, easy honey-lemon drizzle. Kale chips just don’t get better than this!

A pile of crispy kale chips on a plate

Why This Recipe Is So Good

  • They are easy to make Whole30, vegan, low carb, or keto.
  • They are perfectly crispy and so tasty.
  • They are a great healthy alternative to potato chips.

How to Make It

  • Pre heat the oven 300F.
  • After you have washed the kale, completely dry it. This is critical to crispy kale chips. Use a salad spinner ideally.
  • Massage the oil into the kale and spread on two baking sheets. DO NOT OVERCROWD if you overcrowd, they will steam and will not get crispy.
  • Bake in the pre heated oven for 10 minutes. Then, switch the position of the sheets and cook for another 10-12 minutes or until crunchy but not brown. Remove from the oven.
  • Melt the butter, add the honey, lemon and salt and stir together. Pour over the chips and serve.

Recipe Variations

  • to make whole30 simply omit the drizzle
  • to make vegan replace the butter with vegan butter or coconut oil and use maple syrup instead of honey
  • to make low carb or keto, omit the drizzle, or make it either without sweetener or with a keto-friendly sweetener

What Makes These Chips So Good

These crispy kale chips are seriously so delicious and really crispy. A few simple techniques make them this way:

  • All water MUST be removed from the kale. Spin the kale in a salad spinner. If you do not remove all the water, the kale will steam in the oven and the kale will be wilty.
  • Do not overcook them. They will get brown and change taste. You want them to look matte and hold their shape (not be droopy) but they should not *feel* super crispy/crunchy right out of the oven.
  • Do not overcrowd the baking sheets. You’ll need two baking pans. This is another critical technique for crispy kale chips

Kale chips are my Friday night treat with a glass of wine. I make them without anything on them but will try the honey-lemon drizzle for a change.
