Tender, juicy turkey breast, stuffing dotted with dried cranberries, and green beans… all made in the Crockpot! This Crockpot turkey and stuffing recipe was my favorite way to make Thanksgiving dinner when I was in college or living on my own. You get all the flavors of a full holiday meal, with just a tiny fraction of the work and time. Serve with mashed potatoes, and make the gravy recipe included, for the full spread!
Before You Get Started
- The internal meat thermometer is absolutely crucial for this recipe, so make sure you have a reliable one! If you rely solely on the cook time, you’ll most likely end up with dry, tough, overcooked turkey, and then you’ll have to relocate your holiday dinner to a Denny’s like you’re in The Santa Clause.
- This recipe was developed for and tested in a 6-quart Crockpot. If you’re using a smaller or larger slow cooker, you may need to adjust the ingredient amounts and the cook time to ensure everything cooks through like it should.

Season the turkey.
I like to start with a super generous amount of salt and fresh ground pepper on all sides of the turkey breast, then on top of that we’ll sprinkle a blend of dried sage, garlic powder, and onion powder. Feel free to massage the spices into the turkey to make sure they really stick.
Stuffing, Green Beans, Gravy – Oh, My!
Pour both boxes of stuffing mix into your 6-quart Crockpot, then add dried cranberries if you’re using them. Stir those together, then spread the stuffing out evenly across one half of the bottom of the slow cooker. Spread the green beans out evenly over the other half of the insert.
If you’re cooking for picky eaters or anyone with food sensitivities, keep the stuffing on one side of the Crockpot and the green beans on the other. Otherwise, you can stir the frozen green beans right in to the stuffing and then spread the stuffing out evenly across the whole Crockpot.
In a separate bowl, mix together the gravy ingredients, then pour the gravy over the stuffing and stir to incorporate.
Low and slow.
Lay the seasoned turkey breast in the slow cooker, pour melted butter over it, then cover it with the lid and set your time and temperature. The cook time isn’t as important as the internal temperature of the turkey, so don’t go by the clock alone! Whenever your turkey reaches 160° Fahrenheit internally, take it out of the Crockpot and set it aside to rest. Fluff the stuffing with a fork, then cook it uncovered on low heat for 15 minutes while the turkey rests.
Slice, scoop, serve, and savor!

Recipe Variations
- Stuffing: Any boxed (or bagged) stuffing mix will work here! Different types of stuffing mix will change the flavors in the recipe slightly, so feel free to try different ones or even use a blend of different types.
- Green Beans: If you don’t like the idea of green beans cooked with the stuffing and the turkey, you can leave those out of the Crockpot and cook them on their own instead. Use frozen steamable green beans, canned green beans, or give one of my green bean recipes a try! I’m a huge fan of air fryer green beans, but I also really love these Italian green beans, sautéed green beans, and elevated green beans almondine.

Crockpot Turkey and Stuffing
Equipment
- Cutting board
- 6-quart Crockpot or similar slow cooker
- neutral-flavored spray oil
- small mixing bowl
- whisk

- Small microwave-safe bowl
- Microwave
- internal probe thermometer
- Tongs
- Fork
Ingredients
For the Turkey
- 1 7-pound boneless turkey breast with pop-up timer
- salt
- freshly cracked black pepper
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon dried sage
- ¼ cup unsalted butter
For the Stuffing and Green Beans
- 2 6-ounce boxes stuffing mix
- ½ cup dried cranberries optional but recommended
- 1 12-ounce bag frozen green beans
For the Gravy
- 2 10.5-ounce cans condensed cream of chicken soup
- 1 cup low-sodium chicken broth up to 2 cups if needed
- ½ cup full-fat sour cream at room temperature
Instructions
- Place 1 7-pound boneless turkey breast on cutting board. Cover all sides of turkey breast heavily with salt and freshly cracked black pepper.
- Add 1 teaspoon garlic powder, ½ teaspoon onion powder, and ¼ teaspoon dried sage to small mixing bowl. Whisk ingredients together, then sprinkle mixture evenly onto all sides of turkey breast. Rub spice blend into turkey breast as needed. Set turkey aside.
- Coat bottom and all sides of Crockpot insert with neutral-flavored spray oil.
- Add 2 6-ounce boxes stuffing mix and ½ cup dried cranberries to Crockpot. Gently stir to incorporate, then spread stuffing mixture out evenly across one half of Crockpot insert.
- Spread 1 12-ounce bag frozen green beans evenly across other half of Crockpot insert. Alternately, add frozen green beans to Crockpot and stir green beans into stuffing mixture, then spread stuffing mixture evenly across entire insert.
- Add 2 10.5-ounce cans condensed cream of chicken soup, 1 cup low-sodium chicken broth, and ½ cup full-fat sour cream to medium mixing bowl. Stir ingredients together until fully combined, then pour gravy mixture over stuffing in Crockpot. Stir to incorporate.
- Place seasoned turkey breast in Crockpot on top of stuffing and green beans, with pop-up timer facing up.
- Microwave ¼ cup unsalted butter in small microwave-safe bowl until melted, but not bubbling. Pour melted butter evenly over top of turkey breast.
- Cover Crockpot with lid. Set Crockpot to HIGH for 3 to 4 hours, or LOW for 5 to 6 hours.
- After 3 (or 5) hours, use internal probe thermometer to check internal temperature of turkey breast. Continue cooking turkey as needed until internal temperature reaches 160° Fahrenheit. Note: Do not overcook turkey. Remove turkey when 160° temperature is reached, regardless of cook time.
- When turkey reaches 160° Fahrenheit internally, use tongs to carefully remove turkey from Crockpot. Set turkey aside to rest.
- While turkey rests, gently stir stuffing with fork. Leave lid off Crockpot and cook stuffing and green beans on LOW 15 minutes. Stir in additional chicken broth as needed to achieve desired consistency.
- After 15 minutes, slice turkey breast. Divide slices of turkey, stuffing, and green beans into preferred portion sizes and serve hot.
- Internal Temperature: It’s crucial that you use an internal meat thermometer for this recipe! Remove the turkey when it reaches 160° Fahrenheit inside – that was around 3.5 hours for me. It will continue cooking as it rests!
