Equipment

  • Large skillet
  • Small bowl (2)
  • Large bowl

Ingredients

  • 1 pound ground beef
  • 2 ½ tablespoons taco seasoning store-bought or homemade, divided
  • 2 avocados peeled, pit removed
  • salt to taste
  • juice of ½ lime plus wedges for serving
  • ¼ cup sour cream or Mexican crema
  • 2 medium heads romaine or iceberg lettuce chopped, approximately 8 cups
  • 1 cup shredded Mexican cheese blend
  • 2 tomatoes diced, approximately 1 ½ cups
  • ¼ cup chopped red onion optional
  • ½ cup salsa see Notes

Instructions
 

  • In large skillet, start to brown ground beef over medium heat. When beef is approximately half browned, sprinkle 2 tablespoons taco seasoning over and stir to distribute. Continue cooking meat, crumbling until browned completely. Turn heat to low to maintain warmth.
  • In one small bowl, mash avocado. Season with plenty of salt and juice of ½ lime and combine. Set aside.
  • In other small bowl, stir together ¼ cup sour cream and remaining ½ tablespoon taco seasoning. Set aside.

Assemble Salad

  • Place equal amounts of lettuce in serving bowls. Top lettuce with ground beef, then cheese, tomatoes, mashed avocado, onion (optional), salsa, and sour cream mixture. Serve immediately.
  • Salsa: Use a salsa with the lowest carbs and no added sugar or non-keto sugar substitutes.
  • Make it Paleo: skip the shredded cheese and sour cream.
