Equipment

  • Instant Pot

Ingredients

  • 1 pound dried black beans (rinsed)
  • 1 tablespoon oil
  • ½ medium white onion (chopped)
  • 4 garlic cloves (minced)
  • 5 cups water (or stock)
  • 1 tablespoon seasoning (see notes)
  • salt (to taste)

Instructions

  • If you're soaking your black beans (totally optional!), soak them in cool water overnight, about 10-12 hours. Drain when ready to cook.
  • Set Instant Pot to Saute mode. Add oil, then garlic and onion. Saute until softened, stirring regularly, about 5 minutes.
  • Add stock and black beans. Secure lid.
  • For unsoaked beans: Cook on manual high pressure for 35 minutes.
  • For soaked beans: Cook on manual high pressure for 8 minutes.
  • Do not release pressure when time is up. Let naturally release until the silver pin drops. After natural release, stir in seasoning and salt to taste.

Recipe Notes

Soaking: Soaking can help alleviate any digestive discomfort associated with beans. Bonus, it also reduces the cooking time quite a lot! If you soak, cover your beans with cool water overnight, at least 10 to1 2 hours. Drain before cooking.
Salting: Add salt after cooking, as adding it during the cooking process can result in tougher beans.
