Garlic Steak Bites with Microwave Bearnaise Sauce

These garlic steak bites are tender and savory, tossed in a garlic buttery mixture, all served with a 5-minute bearnaise sauce... made in the microwave! Grain free, gluten free, and no added sugar, with paleo and lactose-free options.

For the Microwave Bearnaise Sauce
- ¼ cup butter (½ stick, cut into 4 pieces, see Notes)
- 2 large egg yolks
- 2 tablespoons heavy cream (see Notes)
- ½ tablespoon red wine vinegar
- 1 teaspoon fresh tarragon (chopped, or ¼ teaspoon dried)
- 1 large pinch salt
For the Steak Bites
- 1 ½ pounds steak (cut into 2-inch cubes, see Notes)
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 tablespoon avocado oil (plus more if needed)
- 2 tablespoons butter (see Notes)
- 4 cloves garlic (minced)
For the Microwave Bearnaise Sauce
Note: make the bearnaise sauce while the steak bites are cooking, or make it first and keep it warm in a covered, insulated container (like a Yeti cup).
Place butter in microwave-safe bowl and cover with paper towel. Microwave on high until almost melted, approximately 45 to 60 seconds. Remove from microwave and stir until completely melted.
Note: If eggs are not already separated, separate them now. If desired, set aside egg whites for another recipe.
In small bowl, beat egg yolks with whisk or fork, then add heavy cream and red wine vinegar. Stir to combine.
Slowly add cream mixture to melted butter, stirring thoroughly. Microwave mixture on high, uncovered, until just slightly thick, approximately 45 to 60 seconds. Stop every 15 seconds to stir mixture with fork. Note: DO NOT continue microwaving mixture after thickened - it will break. If butter seems to separate a little, whisk vigorously until smooth.
Remove sauce from microwave. Stir in tarragon and salt. Serve immediately or insulate until serving.
For the Steak Bites
Liberally season all sides of steak bites with salt and pepper.
In large skillet, heat avocado oil over medium-high heat until hot.
Add steak bites to skillet in batches, careful not to overcrowd skillet. Sear steak for 2 minutes, adding extra oil as needed, until edges are browned and crispy. Using silicone spatula, stir to brown all edges, cooking another 2 minutes or so. Transfer steak to plate. Repeat as needed until all steak is seared.
Reduce heat to low. Add butter to empty skillet and let melt completely. Add minced garlic. Sauté until fragrant, approximately 30 seconds, while scraping any browned bits from bottom of skillet with spatula.
Remove pan from heat. Return steak bites to pan, tossing in garlic butter to coat thoroughly. Serve with bearnaise sauce.
- Steak: Any steak will work. I recommend New York strip, ribeye, sirloin, or filet mignon.
- Make it Paleo/Lactose-Free: Use ghee instead of butter for the steak, and follow this stovetop Whole30 Bearnaise Sauce recipe. You may be able to make the microwave bearnaise sauce using ghee (instead of butter) and coconut cream (instead of heavy cream) but I haven't tried it so I'm not sure how it would turn out.
