Asian Slaw

Ingredients

For the Slaw

  • dry ramen noodles (from 1 packet chicken-flavor ramen noodle soup)
  • 3 ounces slivered almonds
  • sesame seeds
  • 1 16-ounce bag coleslaw mix
  • 1 cup chopped green onions (approximately 1 bunch)
  • 2 small mandarin oranges (approximately 3 ounces each; peeled, segmented)

For the Dressing

  • ½ cup avocado oil (or other neutral-flavored oil)
  • ¼ cup granulated sugar (or Granular Swerve)
  • 3 tablespoons red wine vinegar
  • seasoning packet (from 1 packet chicken-flavor ramen noodle soup)

Instructions

  • Preheat oven to 350° Fahrenheit. Break dry ramen noodles into small pieces, then arrange broken noodles, 3 ounces slivered almonds, and sesame seeds on large baking sheet.
  • Place baking sheet in preheated oven. Bake ingredients 10 minutes or until just browned. Once browned, carefully remove baking sheet from oven and set aside to cool completely.
  • While baking ingredients, add ½ cup avocado oil, ¼ cup granulated sugar, 3 tablespoons red wine vinegar, and seasoning packet to medium mixing bowl. Whisk ingredients together until fully incorporated.
  • Cover bowl and refrigerate dressing mixture until ready to serve.
  • Once toasted almonds and noodles have cooled, add noodles, almonds, sesame seeds, 1 16-ounce bag coleslaw mix, 1 cup chopped green onions, and 2 small mandarin oranges to large mixing bowl. Toss salad until ingredients are well blended.
  • Pour chilled dressing over slaw mixture. Toss until slaw mixture is fully coated in dressing. Serve immediately.

Recipe Notes

  • Storage: To maintain the texture of the ingredients, refrigerate the dressing separately from the slaw mixture. Store the toasted ingredients in an airtight container at room temperature. Mix immediately before serving.
