Instant Pot Black Beans

Ingredients

  • 1 pound dried black beans rinsed
  • 1 tablespoon oil
  • ½ medium white onion chopped
  • 4 garlic cloves minced
  • 5 cups water or stock
  • 1 tablespoon seasoning see notes
  • salt to taste

Instructions

  • If you're soaking your black beans (totally optional!), soak them in cool water overnight, about 10-12 hours. Drain when ready to cook.
  • Set Instant Pot to Saute mode. Add oil, then garlic and onion. Saute until softened, stirring regularly, about 5 minutes.
  • Add stock and black beans. Secure lid.
  • For unsoaked beans: Cook on manual high pressure for 35 minutes.
  • For soaked beans: Cook on manual high pressure for 8 minutes.
  • Do not release pressure when time is up. Let naturally release until the silver pin drops. After natural release, stir in seasoning and salt to taste.

Notes

Soaking
Soaking can help reduce any digestive discomfort you might associate with beans. Bonus, it also reduces the cooking time quite a lot! If you soak, cover your beans with cool water overnight, at least 10-12 hours. Drain before cooking.
Salting
We salt AFTER cooking because adding salt during the cooking process can result in tougher beans.
