This strawberry mimosa drink recipe blends fresh strawberries and orange juice, then tops it with chilled sparkling wine for a fizzy, fruit-forward sip that looks absolutely stunning in the glass. Serve this for Easter brunch, spring and summer gatherings, or any occasion that calls for something celebratory!

For the Strawberry Base
- 3 cups strawberries (fresh or frozen)
- 2 cups chilled orange juice (fresh squeezed or with pulp)
- 1 to 2 tablespoons sugar (adjust to taste)
- 1 cup chilled sparkling wine (Brut, Cava, or dry Prosecco)
To Top and Garnish
- Remaining chilled sparkling wine from 1 bottle (Brut, Cava, or dry Prosecco)
- Fresh strawberry slices (orange slices, or mint sprigs, for garnish)
Add 3 cups strawberries, 2 cups chilled orange juice, 1 to 2 tablespoons sugar, and 1 cup chilled sparkling wine to a blender. Blend on high until completely smooth, about 30 to 45 seconds. If mixture is too thick to pour, add a splash more sparkling wine and blend briefly until smooth and pourable.
Pour blended strawberry mixture into each champagne flute, filling halfway.
Hold each glass at a slight angle and slowly pour remaining chilled sparkling wine down the inside edge of the glass to about three-quarters full. Pouring at an angle preserves carbonation.
Give each glass one gentle stir to combine.
Garnish each glass with a fresh strawberry slice, orange slice, or sprig of mint. Serve immediately.
Blender: Any standard countertop blender works. If you have a high-powered blender like a Vitamix or Blendtec, you'll get an extra smooth, chunk-free result — ideal if you're entertaining and want that polished look in the glass.
Make Ahead: Blend the strawberry base up to 24 hours ahead and store refrigerated in a sealed pitcher. Stir well before serving, as mixture may separate. Top individual glasses with sparkling wine right before serving to preserve bubbles.
Best Sparkling Wine: Use a dry sparkling wine — Brut Champagne, Brut Cava, or dry Prosecco. Avoid "extra dry" or "sweet" labeled bottles, as the strawberry-OJ base is already naturally sweet.
Make It a Mocktail: Replace all sparkling wine with chilled sparkling water, lemon-lime soda, or non-alcoholic sparkling wine. Use the same method.
Scaling Up: Double or triple the blended base as needed. Plan on approximately 1 bottle of sparkling wine per 6 servings. Keep the base chilled in a pitcher and top glasses individually to order.
