Slow Cooker Creamy Cajun Chicken & Pasta Soup

This Slow Cooker Cajun Chicken Pasta Soup is a family-friendly, super creamy chicken soup recipe made with chicken in a light, creamy tomato broth. It's light yet filling, and a complete meal for busy weeknights.

Equipment

  • Slow Cooker 6-quarts for best results

Ingredients

  • 1 pound chicken breasts
  • 2 tablespoons Cajun seasoning (divided)
  • 1 small white onion (chopped)
  • 4 cloves garlic (minced)
  • 14.5 ounce can diced tomatoes (undrained)
  • 4 cups chicken broth
  • 1 cup heavy cream (at or close to room temperature)
  • 1 cup ditalini (or other small dry pasta shape)
  • 1 cup freshly grated parmesan (at room temperature)
  • salt and pepper (to taste)
  • green onions sliced (to garnish)

Instructions

  • Season both sides of chicken breasts with 1 tbsp Cajun seasoning.
  • Add the seasoned chicken to the bottom of a 6 quart or larger slow cooker. Top with the chopped onion, garlic, diced tomatoes, the remaining 1 tbsp of Cajun seasoning, and the chicken broth.
  • Cover and cook on LOW for 6-8 hours, or HIGH for 2-3 hours.
  • Remove the chicken from the slow cooker and set aside. Add the pasta and cook on high 15-30 minutes, or until al dente. Meanwhile, shred or dice the chicken.
  • Return the shredded chicken to the slow cooker, before gradually adding in heavy cream and grated parmesan, stirring as you go until the cheese is melted and well blended. Taste and correct the seasonings, then ladle into bowls and garnish with green onions.

Recipe Notes

Cooking the pasta: Start checking the pasta for doneness after about 15 minutes. Exact cooking times will vary depending on the pasta shape, the brand of pasta you're using and your slow cooker.
Leftovers: Leftovers should keep for about 3-4 days in the refrigerator. If you expect leftovers, it might be an idea to cook the pasta separately from the soup and add it at the end, then cook fresh for each portion. The pasta will continue to absorb liquid in the fridge, making the pasta soft and the soup a little too thick. As the soup contains cream, gently heat it through on the stovetop rather than in the microwave to stop it splitting. Also, I would not recommend freezing it for the same reason.
