Ingredients

For the Dip

  • 1 cup whole milk ricotta
  • 1 to 2 teaspoons honey
  • zest ½ lemon
  • 1 pinch flaky salt
  • 1 teaspoon olive oil

For Garnish (Optional)

  • Extra honey drizzle
  • More lemon zest
  • Cracked black pepper
  • Chopped pistachios
  • Fresh thyme
  • Red pepper flakes

For Suggested Serving

  • Toasted baguette slices

Instructions

  • Add 1 cup whole milk ricotta, 1 to 2 teaspoons honey, the zest of ½ lemon, and 1 pinch flaky salt to medium mixing bowl. Stir together until roughly combined.
  • Using hand mixer on medium speed or whisking vigorously, beat mixture for 60 to 90 seconds, scraping down sides of bowl once halfway through, until dip is light, fluffy, and creamy.
  • Spread whipped ricotta into shallow serving dish. Use back of spoon to create a gentle swirl across the surface.
  • Drizzle 1 teaspoon olive oil over the top. Add any desired garnishes — extra honey, more lemon zest, cracked black pepper, chopped pistachios, fresh thyme, or red pepper flakes.
  • Serve immediately with toasted baguette slices.

Recipe Notes

Make it Ahead: Whip ricotta base up to 24 hours in advance and store in airtight container in refrigerator. Add olive oil, honey, and garnishes right before serving. Let sit at room temperature 10 minutes before serving.
Storage: Store leftover dip without garnishes in airtight container in refrigerator for up to 4 days. Stir before serving. Do not freeze.
Honey Tip: Start with 1 teaspoon honey mixed in, taste after whipping, then add more to preference. Reserve extra honey for drizzling on top.
Drain Richotta if Needed: If ricotta seems watery, place in fine mesh strainer over bowl and drain 10 to 15 minutes before using for the best texture.
Toasting Baguette Slices: Slice baguette about ½ inch thick. Brush lightly with olive oil. Toast in 400°F oven 5-7 minutes per side until golden. Serve warm.
