Virgin Mojito

A virgin mojito makes a fantastic non-alcoholic mocktail that's full of fresh mint, lime juice, perfectly sweetened, and finished with fizzy club soda. Perfect when pregnant or for any time you don't want or need alcohol in your beverage. We can't get enough of these virgin mojitos!

Equipment

  • Glass
  • Muddler (or wooden spoon)

Ingredients

  • 15 mint leaves
  • 1 ounce fresh lime juice
  • ½ ounce simple syrup see Notes for alternatives
  • ice
  • 4 ounces club soda or sparkling water or ginger ale
  • lime wedge optional, for garnish

Instructions

  • Add mint leaves, lime juice, and simple syrup to glass. Muddle mint leaves gently.
  • Add as much ice as desired, then top with club soda. Stir lightly to combine. Garnish with lime wedges (optional) and enjoy.

Notes

  • Simple Syrup Alternatives: Make your own (see below) or stir 1/2 ounce honey into 1/2 ounce hot water, whisking until very smooth.
  • Make it Lower Carb: Make your own simple syrup out of a powdered erythritol or allulose. 
 
Make Your Own Simple Syrup
  • Put equal parts sugar (or powdered erythritol, or allulose) and water into heatproof glass container.
  • Microwave on high just until mixture barely starts to boil, usually around 1 minute or so. It's fine if it boils for a few moments.
  • Remove from microwave and stir to dissolve sugar.
