Pecan Crusted Chicken Cutlets

Make crispy, crunchy chicken for dinner tonight... without any breadcrumbs and without any frying! This delicious pecan crusted chicken is also served with a creamy honey mustard sauce. Just serve some vegetables on the side!

Equipment

  • large baking sheet
  • baking parchment
  • Pastry brush natural or silicone
  • Food processor

Ingredients

  • 4 boneless skinless chicken breasts (thin sliced, or to thick breasts sliced down the middle into cutlets)
  • 1 cup pecans
  • ½ teaspoon paprika
  • ¼ teaspoon garlic powder
  • ¼ cup Dijon mustard
  • salt and pepper
  • fresh thyme (optional, to garnish)

Honey-Mustard Sauce

  • 1 cup plain Greek yogurt
  • 3 tablespoons Dijon mustard
  • ¼ cup honey
  • salt (to taste)

Instructions

  • Pre-heat the oven to 400℉ and line a large baking sheet with baking parchment.
  • In a food processor, pulse the pecans with the paprika and garlic powder.
  • Pat the chicken dry with kitchen paper. Season with salt and pepper, and brush on the mustard. Using your hands, press the pecan coating onto the chicken, transferring the cutlets to the prepared baking sheet.
  • Bake for 25 minutes, or until the pecans are golden and the chicken reaches an internal temperature of 165°F.

Honey-Mustard Sauce

  • Meanwhile, in a small bowl, combine all of the ingredients for the honey mustard sauce.

Recipe Notes

Coating the chicken: The coating won't stick to the chicken if you don't pat the chicken dry before brushing with the mustard.
Without a food processor: Finely chop the pecans with a heavy knife.
Make it dairy free: Choose a thick dairy free yogurt to prevent a runny sauce.
