Recipe Makes (Approximate): 6

Equipment

  • 6-quart Dutch Oven or stockpot

Ingredients

  • 1 pound ground beef
  • 1 onion (chopped)
  • 4 cloves garlic minced
  • 1 large bell pepper of choice (chopped)
  • 4 cups beef broth
  • 14.5 ounce can diced tomatoes with green chilis (undrained)
  • 15.5 ounce can pinto beans (undrained)
  • 15.25 ounce can corn (drained)
  • 1 pound yukon gold potatoes (cut into bite-sized pieces)
  • 1 tablespoon chili powder
  • 1 teaspoon paprika (preferably smoked)
  • 1 teaspoon ground cumin
  • salt and freshly ground black pepper (to taste)

Instructions

  • Heat a large stock pot over medium-high heat. Add ground beef, onions and garlic. Cook, breaking up beef with a spatula, until onions have softened and beef is no longer pink. This should take about 5 minutes. Drain off the excess grease.
  • Add the bell pepper, beef broth, tomatoes, beans, corn, potato, chili powder, paprika, and cumin. Bring to a boil before reducing the heat and simmering for 40 minutes.
  • Season with salt and pepper just before serving.

Recipe Notes

Dicing the potatoes: ¾ inch was the right size to cut the potatoes. Larger chunks might still be underdone when the rest of the soup is ready, and I found that smaller ones started dissolving into the broth.
Leftovers:  Leftovers should last 3-4 days in the refrigerator. Reheat portions in the microwave, or the entire pot (only once!) on the stovetop. You might need to add a splash of water as the potatoes and beans will absorb liquid as the soup sits.
Freezing: You can freeze the soup for up to 3 months, but the potatoes may turn a little soft or grainy. Thaw portions overnight in the fridge before reheating.
