Refreshing Blueberry Mojitos

These blueberry mojitos are a simple and delicious homemade cocktail recipe for summer! Fresh blueberries are muddled with mint and lime juice before being topped up with white rum and club soda for a refreshing long cocktail that is super easy to drink!

Equipment

  • cocktail muddler or the bottom of a rolling pin

Ingredients

  • 8 blueberries
  • ½ lime (cut into 2 wedges)
  • 6 fresh mint leaves
  • fluid ounces white rum
  • ½ fluid ounce simple syrup (see notes for recipe)
  • large handful fresh ice (or crushed ice)
  • 2 fluid ounces club soda (to taste)
  • 3 blueberries (for garnish, optional)
  • 3 fresh mint leaves (for garnish, optional)

Instructions

  • Place the blueberries, lime, and mint in the bottom of a tall glass and muddle so the blueberries have broken up, the lime has released juice and the mint leaves are slightly bruised.
  • Add the rum, simple syrup, and soda, and stir. Add ice and soda, to taste. Garnish with more blueberry and mint leaves, if desired.

Recipe Notes

To make simple syrup, combine 1 cup sugar and 1 cup water. Bring to a boil, stir to make sure all sugar is dissolved, and remove from heat. Let cool.
