These blueberry mojitos are a simple and delicious homemade cocktail recipe for summer! Fresh blueberries are muddled with mint and lime juice before being topped up with white rum and club soda for a refreshing long cocktail that is super easy to drink!

cocktail muddler or the bottom of a rolling pin
Ingredients
8blueberries
½lime(cut into 2 wedges)
6fresh mint leaves
1½fluid ounceswhite rum
½fluid ouncesimple syrup(see notes for recipe)
large handful fresh ice(or crushed ice)
2fluid ouncesclub soda(to taste)
3blueberries(for garnish, optional)
3fresh mint leaves(for garnish, optional)
Instructions
Place the blueberries, lime, and mint in the bottom of a tall glass and muddle so the blueberries have broken up, the lime has released juice and the mint leaves are slightly bruised.
Add the rum, simple syrup, and soda, and stir. Add ice and soda, to taste. Garnish with more blueberry and mint leaves, if desired.
Recipe Notes
To make simple syrup, combine 1 cup sugar and 1 cup water. Bring to a boil, stir to make sure all sugar is dissolved, and remove from heat. Let cool.
