The BEST Parmesan Truffle Fries

Perfectly baked fries tossed in truffle oil and plenty of parmesan cheese - yum! These fries are irresistibly crispy and delicious. They're a healthier version of a popular classic.

Equipment

  • large baking sheet
  • Large bowl

Ingredients

  • 2 pounds Russet potatoes cut into 1/4-inch thick fries
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 1 tablespoon truffle oil see Notes
  • ¼ cup parmesan cheese freshly grated
  • flaky salt for serving
  • fresh chopped parsley for serving

Instructions

  • Preheat oven to 425° Fahrenheit and line a baking sheet with parchment paper.
  • In a large bowl, toss together the potatoes, olive oil, salt, and garlic powder.
  • Place fries on prepared baking sheet at least 1-inch apart, and bake for 30 minutes, flipping halfway through.

  • Remove fries from oven, and immediately drizzle with truffle oil, then sprinkle on some parmesan cheese and flaky salt.

Notes

  • Truffle Oil: I used white truffle oil on my fries since it has a more mild flavor which I prefer. However, black truffle oil works as well in this recipe!
