The BEST Parmesan Truffle Fries
Perfectly baked fries tossed in truffle oil and plenty of parmesan cheese - yum! These fries are irresistibly crispy and delicious. They're a healthier version of a popular classic.

- 2 pounds Russet potatoes cut into 1/4-inch thick fries
- 3 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon garlic powder
- 1 tablespoon truffle oil see Notes
- ¼ cup parmesan cheese freshly grated
- flaky salt for serving
- fresh chopped parsley for serving
Preheat oven to 425° Fahrenheit and line a baking sheet with parchment paper.
In a large bowl, toss together the potatoes, olive oil, salt, and garlic powder.
Place fries on prepared baking sheet at least 1-inch apart, and bake for 30 minutes, flipping halfway through.
Remove fries from oven, and immediately drizzle with truffle oil, then sprinkle on some parmesan cheese and flaky salt.
- Truffle Oil: I used white truffle oil on my fries since it has a more mild flavor which I prefer. However, black truffle oil works as well in this recipe!
