Cheesy Spinach Casserole

This spinach casserole is deliciously healthy, while extra cheesy! Plenty of spinach is baked into a casserole with two types of cheeses, and crispy breadcrumbs. Add this cheesy spinach casserole to your holiday table for a veggie-packed side dish everyone will love!

Equipment

  • Large bowl
  • 9x13 baking dish

Ingredients

  • 2 pounds frozen spinach
  • 1 cup plain breadcrumbs
  • 1 cup cream cheese
  • ½ cup grated parmesan cheese
  • 3 tablespoons butter melted
  • 1 egg
  • ½ teaspoon salt
  • pinch of nutmeg

Instructions

  • Preheat oven to 350° Fahrenheit.
  • Thaw frozen spinach in a colander under running water. Once thawed, press out as much water from spinach as possible.
  • Transfer thawed spinach to a bowl along with the remaining ingredients. Mix everything together to combine.
  • Transfer mixture to a 9x13-inch baking dish and bake for 30-35 minutes or until golden brown around the edges.

Notes

  • Make it Keto: Leave out the breadcrumbs and use an additional cup of freshly grated parmesan cheese.
