Creamy Avocado Dressing

This avocado dressing is deliciously creamy, easy to make, and healthy! With yogurt, olive oil, a bit of cilantro or other herbs, a little garlic, and a squeeze of lime, this salad dressing is super versatile, perfect to have in the fridge at all times for an instant salad upgrade!

Equipment

  • Food processor or standard blender

Ingredients

  • 1 avocado halved, peeled, pit removed
  • ¼ cup plain yogurt see Notes
  • ¼ cup olive oil or other neutral oil
  • ¼ cup water plus more if needed
  • ¼ cup cilantro leaves or basil or parsley leaves
  • squeeze of lime if using cilantro, ½-1 teaspoon vinegar if using other herbs
  • 1-2 cloves garlic minced
  • ½ teaspoon salt
  • pepper to taste

Instructions

  • Add all ingredients to food processor or blender.

  • Process until smooth. For thinner consistency, add more water in 1 teaspoon increments, processing after each addition. Serve immediately or transfer to airtight container and refrigerate until chilled.

Notes

  • Make it Paleo/Dairy Free/Vegan: Use unsweetened, dairy-free yogurt.
