Paleo Double Chocolate Fudge Cookies Recipe

These Paleo Double Chocolate Fudge Cookies are seriously chocolatey and gooey. Pair these easy, kid-friendly Paleo cookies with a glass of coconut or nut milk and you will be in dessert heaven.

Ingredients

  • 1 1/2 cups almond flour
  • 1/4 cup tapioca starch
  • 1/4 cup cacao powder
  • 1/4 cup coconut sugar
  • 1/2 tsp baking soda
  • pinch sea salt
  • 2 eggs
  • 1/2 cup cashew butter
  • 1/4 cup melted coconut oil
  • 2 tbsps honey
  • 1 tbsp organic vanilla extract
  • 1/3 cup dairy and soy free chocolate chips

Instructions

  • Preheat your oven to 350F.
  • Add all the ingredients, except the chocolate chips, to your standing mixer and blend on low until smooth.
  • Stir in the chocolate chips by hand with a spoon.
  • Line 2 baking sheets with parchment paper.
  • Form the dough into 1.5" balls, using your hands and place them on the cookie sheet – TIP: Wet your hands every 2-3 cookies to make the dough easier to work with.
  • Place the cookie sheets in the oven and bake for 8-9 minutes (until the bottoms of the cookies are golden - you don't want to overcook these).
  • Remove from the oven and let cool for a few minutes.
  • Serve and enjoy!
