Paleo Double Chocolate Fudge Cookies Recipe

- 1 1/2 cups almond flour
- 1/4 cup tapioca starch
- 1/4 cup cacao powder
- 1/4 cup coconut sugar
- 1/2 tsp baking soda
- pinch sea salt
- 2 eggs
- 1/2 cup cashew butter
- 1/4 cup melted coconut oil
- 2 tbsps honey
- 1 tbsp organic vanilla extract
- 1/3 cup dairy and soy free chocolate chips
Preheat your oven to 350F.
Add all the ingredients, except the chocolate chips, to your standing mixer and blend on low until smooth.
Stir in the chocolate chips by hand with a spoon.
Line 2 baking sheets with parchment paper.
Form the dough into 1.5" balls, using your hands and place them on the cookie sheet – TIP: Wet your hands every 2-3 cookies to make the dough easier to work with.
Place the cookie sheets in the oven and bake for 8-9 minutes (until the bottoms of the cookies are golden - you don't want to overcook these).
Remove from the oven and let cool for a few minutes.
