Whole30 Shrimp Boil with Sausage, Potatoes, and Garlic Ghee (Paleo)

Ingredients

  • 2 quarts water 8 cups
  • 3 Tbsp. Old Bay Seasoning
  • 1 1/2 tsp. salt plus more to taste
  • 1 piece lemon halved
  • 1/4 piece Vidalia onion sliced
  • 3/4 pound small red potatoes
  • 1/2 lb. Whole30-approved kielbasa like Pederson's, sliced into about 1/2" slices
  • 1 pound large shrimp unpeeled
  • 1/4 cup ghee
  • 1 tsp. finely minced garlic

Instructions

  1. Make garlic ghee: Heat ghee in a small saucepan over medium heat. Add garlic and a couple big pinches of a salt and reduce heat to low. Cook until the garlic is fragrant, then immediately remove from heat. Pour garlic ghee through a mesh sieve, if you prefer, then set aside.
  2. Bring water to boil in a large stock pot. Add Old Bay and 1 1/2 teaspoons salt. Juice lemons into pot then add lemon halves to pot. Add potatoes and onions; boil for 11 minutes.
  3. Add kielbasa; boil for 5 minutes.
  4. Make sure potatoes are very tender before continuing. When very tender, add shrimp; boil 2 minutes. Drain immediately then transfer contents to large bowl. Pour garlic ghee over and toss to coat.

Recipe Notes

Sprinkle with extra salt, Old Bay, and squeeze lemon juice over.
