Paleo Red, White, and Blue Cocktails

These paleo red, white, and blue cocktails are perfect 4th of July cocktails: boozy, fruity layers form a striking drink that tastes delish. Easy to make and free of refined sugar and dairy, these are the perfect Memorial Day cocktails, Labor Day cocktails, or heck, just paleo summer cocktails, too. U-S-A!

Ingredients

Red Layer

  • 3 tablespoons honey , or agave nectar if vegan
  • 2 cups frozen strawberries
  • ½ half juice from 1/2 lime
  • 4 ounces rum
  • ½ cup ice cubes

White Layer

  • ¼ cup cold coconut cream
  • 1 cup frozen banana , sliced
  • ½ cup frozen pineapple
  • 2 ounces rum
  • ½ cup ice cubes

Blue Layer

  • 3 tablespoons honey , or agave nectar if vegan
  • 1 ½ cups frozen blueberries
  • 4 ounces rum
  • ½ cup ice cubes

Instructions

  • Combine all red layer ingredients and blend just until smooth in a high-speed blender. Pour into a container and place in the freezer while you make the other layers. Rinse out the blender.
  • Combine all white layer ingredients and blend just until smooth in a high-speed blender. Pour into a container and place in the freezer while you make the blue layer. Rinse out the blender.
  • Combine all blue layer ingredients and blend just until smooth in a high-speed blender. 
  • Pour your cocktails: divided the red layer among either 2 (large) or 4 glasses. You can use a disher to help you portion these equally and delicately, if you like. Next, very carefully divide the white layer amongst the glasses and gently pour or place on top of the red layer. Finally, very carefully divide the blue layer amongst the glasses and gentle pour or place on top of white layer.

Notes

To make non-alcoholic, simply leave out the booze. It'll be great without it!
To make vegan, swap agave nectar for the honey.
This recipe makes enough for two large cocktails or four smaller ones.
I use a Vitamix high-speed blender daily, and it's wonderful for this recipe. 
I use a disher to help divide the layers and gentle place them on top of one another. They're very helpful in keeping the layers clean!
