Peach bellinis are the lightest, most refreshing cocktails you can pull out for a summer party or brunch gathering. Fresh peach puree pairs perfectly with crisp, bubbly Prosecco for a cocktail that tastes like pure summer in a flute!

Recipe Makes (Approximate): 8 servings
- 2 cups fresh or frozen peaches (peeled and diced)
- ¼ cup peach schnapps
- 1 teaspoon lemon juice
- 1 tablespoon sugar (see Notes)
- 1 bottle Prosecco (chilled)
Add peaches, peach schnapps, sugar, and lemon juice to a blender and blend until smooth.
Fill champagne flutes halfway with peach puree and top off with prosecco.
Make it Added-Sugar-Free: Use granulated Swerve, honey, stevia, or monk fruit sweetener instead of sugar.
Make it Non-Alcoholic: Use sparkling cider or seltzer water instead of Prosecco.
To Chill: Add a frozen peach to the bottom of each glass to chill.

Make Ahead: Blend the peach puree up to 24 hours in advance and refrigerate in a sealed container until ready to serve. Stir before using. Don't add the Prosecco until you're ready to pour — it won't hold its bubbles.
To Serve a Crowd: Make a full batch of puree and set it out alongside a chilled bottle of Prosecco so guests can pour their own. Scales easily; just multiply the puree ingredients and blend in batches.
