Apple Cider Mimosas

Classic, refreshing cinnamon apple cider, served with a twist. Bold spices, crisp apples, sweet sugar, and warm cinnamon whiskey mixed with bubbly sparkling wine for the best autumn brunch drink ever.

Equipment

  • large pitcher
  • long-handled wooden spoon
  • 2 shallow dishes or bowls slightly larger than top of flutes, optional
  • small whisk or spoon, optional
  • champagne flutes stemmed or stemless
  • funnel optional

Ingredients

For the Apple Cider Mimosas

  • 1 750-milliliter bottle dry sparkling wine chilled, see Notes
  • 1 32-ounce bottle organic apple cider chilled
  • ¼ cup cinnamon whiskey plus more to taste

For the Cinnamon Rim (Optional)

  • 1 tablespoon granulated sugar or brown sugar
  • 1 teaspoon cinnamon
  • 1-2 tablespoons pure maple syrup

Suggested Garnishes (All Optional)

  • 1 medium apple any variety, sliced into thin discs or wedges
  • sprigs of fresh rosemary
  • whole cinnamon sticks

Instructions

For the Apple Cider Mimosas

  • Pour bottle of sparkling wine and bottle of apple cider into large pitcher. Add ¼ cup cinnamon whiskey and stir until liquids are well-mixed. Taste mixture and add more whiskey as needed. Set pitcher aside.

For the Cinnamon Rim (Optional)

  • Add sugar and cinnamon to shallow dish. Whisk until ingredients are well-incorporated. Set dish aside.
  • Pour maple syrup into second shallow dish.

To Serve

  • Invert one champagne flute and dip rim of glass directly into shallow bowl of maple syrup, making sure rim of glass is well-covered.
  • Hold champagne flute over bowl 2 to 3 seconds to allow excess maple syrup to drip back into bowl, then place rim of glass directly into bowl of cinnamon sugar mixture. Twist and roll rim of glass in cinnamon sugar to coat well.
  • Repeat until rims of all champagne flutes have been dipped in maple syrup and cinnamon sugar.
  • To easily fill glasses, insert funnel into glasses one by one and pour mimosas from pitcher through funnel, to prevent liquid touching cinnamon sugar rim. Repeat until all glasses have been filled.
  • Garnish each glass with apple slices, sprigs of rosemary, and cinnamon sticks if desired. Serve chilled.

Notes

  • Dry Sparkling Wine: Opt for a mid-range prosecco, cava, or champagne.
  • Make it Non-Alcoholic: Replace the sparkling wine with sparkling white grape juice. Omit the cinnamon whiskey and use drops of food-grade cinnamon essential oil to taste.
 

For a Single Apple Cider Mimosa

  • Mix sparkling wine and apple cider together, using slightly more apple cider than wine. Add cinnamon whiskey to taste and stir well to combine.
