Crockpot Baked Brie Dip

Melty brie mixed with sweet preserves and topped with chopped nuts make the most delicious dip that's perfect for a holiday party.

Ingredients

  • ½ cup fig or apricot preserves
  • ¼ cup apple juice
  • 2 8-ounce wheels brie rinds cut off completely, cheese cubed; see Notes
  • ¼ cup toasted pecans chopped
  • 1 baguette sliced, to serve
  • 2-3 apples sliced, to serve

Instructions

  • Add fig or apricot preserves and apple juice to Crockpot. Whisk ingredients together until incorporated.
  • Add cubed brie to Crockpot. Use large spoon to gently stir ingredients together to fully coat brie with juice mixture.

  • Cover slow cooker with lid. Cook on low heat 1 to 2 hours, or until brie is soft and melty.
  • Remove lid and stir dip. Top dip with chopped pecans and additional preserves if desired, then serve warm with baguette and apple slices.

Notes

  • Brie: The rind won't melt, so if it's not cut off completely, the remaining pieces will make your dip sort of lumpy and strange. Be sure to cut off absolutely all of the white bloom!
 

For Larger Slow Cookers

This recipe is intended to be made in a small, 1.5qt Crockpot. If you don't have a slow cooker that small, you can make your dip in a heatproof container (like a Pyrex dish) placed inside your Crockpot insert. A few things to keep in mind if you do this:
  1. Place a steamer rack or a wire trivet in the bottom of the Crockpot insert first, to keep your container off the bottom of the slow cooker.
  2. Place the container in the Crockpot before filling it with ingredients, to make sure it'll fit and that it sits steadily.
  3. Check that the lid of the Crockpot will still fit snugly. If your container sits up too high and keeps the lid from sealing completely, your dip won't "bake" like it should.
  4. Add 1-2 inches of water to the bottom of the Crockpot beneath the inserted dish.
