Cooking sweet potatoes in the Instant Pot is the absolute easiest and quickest way to get fluffy, tender, and perfectly cooked sweet potatoes.

Ingredients

  • 1 cup water
  • Medium sweet potatoes

Instructions

  1. Prick the potatoes all over, place on the trivet and pour in water.
  2. Cook on high pressure 18-22 m (18 for medium, 22-25 for large). Review Notes section for cooking time information. After finished cooking, let the Instant Pot naturally release for 10 minutes.

  3. Quick Release the rest of the steam and serve. Slit down the center of the sweet potato and use a fork to scrape the flesh loose to "fluff" up.
