Instant Pot Sweet Potatoes

The quickest way to get fluffy, tender, and perfectly cooked sweet potatoes.

Equipment

  • running water
  • vegetable scrub brush optional, or paper towels
  • Fork
  • Instant Pot or similar pressure cooker
  • Instant Pot trivet

Ingredients

  • 1 cup water
  • 4 medium sweet potatoes approximately 5-7 ounces each

Instructions

  • Wash sweet potatoes under running water, scrubbing with vegetable brush or paper towels to remove any surface dirt.
  • Carefully poke each sweet potato with tines of fork, creating ¼-inch deep vent holes over entire surface of each potato.
  • Pour water into bottom of Instant Pot, then fit trivet inside Instant Pot. Place sweet potatoes on trivet, stacking potatoes as needed to fit.
  • Secure lid on Instant Pot with vent in Sealing position. Set Instant Pot to Manual High Pressure for 18 minutes (see Notes for alternate cook times). Instant Pot will pressurize and then cook time will begin.
  • Once 18-minute cook time has finished, Natural Release pressure for 10 minutes. After 10 minutes, immediately Quick Release any remaining pressure, then carefully remove Instant Pot lid.
  • Use tongs to transfer sweet potatoes to serving plates. Slice sweet potatoes down center of each, then use fork to fluff insides of potatoes. Dress as desired and serve warm.

Notes

  • You must poke holes in the potatoes with a fork before you cook them! These ventilation holes allow steam to escape from the potatoes and will keep the potatoes from exploding in the Instant Pot.
  • Cook times and results will vary based on the number of potatoes you're cooking, the size of your potatoes, and the size of your Instant Pot.
 

Suggested Cook Times

  • For small (3-5 ounces each) sweet potatoes, set Instant Pot to Manual High Pressure for 16 minutes.
  • For medium (5-7 ounces each) sweet potatoes, set Instant Pot to Manual High Pressure for 18 minutes.
  • For large (8-10 ounces each) sweet potatoes, set Instant Pot to Manual High Pressure for 22 minutes.
  • For extra-large (10+ ounces each) sweet potatoes, set Instant Pot to Manual High Pressure for 25 minutes.
