Paleo Margarita with Champagne Floater

Ingredients

For the Margaritas

  • 1 ½ ounces fresh lime juice 1 shot
  • 1 ½-2 ¼ ounces tequila 1-1 ½ shots
  • ¾ ounce triple sec ½ shot
  • ¾ ounce honey ½ shot
  • 2-3 cups ice as desired
  • ¼ cup champagne of choice

To Serve (All Optional)

  • 1 tablespoon fresh lime juice juice from ½ of one lime, to rim glass
  • 2 tablespoons kosher salt to rim glass
  • 1 lime wedge to garnish

Instructions

To Rim the Margarita Glass

  • Pour lime juice into one shallow dish, then add kosher salt to second shallow dish. Lime juice and salt should each be approximately ⅙-inch deep.
  • Invert glass and dip rim straight down into lime juice. Immediately take moistened glass and dip rim straight down into kosher salt, then lift glass slightly and gently tap glass to shake off any excess salt.
  • Turn glass upright and add ice as desired. Set aside and prepare margarita.

To Make the Margarita

  • Pour lime juice, triple sec, and honey into cocktail shaker. Add ice as desired, close shaker, and shake vigorously until all ingredients are fully combined. Strain liquid from shaker directly into prepared glass. Top margarita mixture with approximately ¼ champagne floater, garnish with lime wedge if desired, and serve immediately.

Notes

  • I prefer my drinks a little more stout so I use 1 ½ shots of tequila. Adjust yours to your preferences!
  • To make this in a pitcher, skip the cocktail shaker and add all your margarita ingredients straight to the pitcher. Stir well to combine, then pour margarita mixture into prepared serving glasses and top with champagne floaters.
