Matcha Raspberry S'mores

Grassy, pillowy matcha marshmallows + melty dark chocolate + tart raspberry jam.. need I really say more?

Ingredients

  • 2 graham crackers
  • 1 teaspoon butter , melted
  • 1 large matcha marshmallow
  • 1 square good dark chocolate , from a bar--ideally breaking off a little (about 2/3 ounce)
  • 1 tbsp small spoonful good raspberry jam

Instructions

  • Preheat your broiler. Now's a good time to text me; I'll be there soon. We can even develop a code word so as not to waste any precious matcha s'mores time.
  • Brush both sides of the graham crackers with melted butter. Place in a single layer on a microwave-safe plate and lay a square of dark chocolate on one graham cracker (for every s'more). Microwave about 30 seconds, or until the dark chocolate is just beginning to soften and melt. Don't microwave too long, or parts of your graham cracker will burn!
  • Transfer the graham cracker with dark chocolate on it to a pan and place a matcha marshmallow on top of the chocolate. Place under broiler and watch carefully--about 1 minute to 90 seconds. The marshmallow should puff up a little and begin to brown; don't let over-broil, as homemade marshmallows are much more sensitive than store-bought! If you prefer your marshmallow a bit more toasted, use a kitchen torch to brown the naked edge.
  • Spoon a bit of cold raspberry jam onto top of toasted marshmallow and top with remaining graham cracker. Serve immediately.
