Preheat oven to 350°F. In. alarge bowl, combine beef, egg, onion, cheese, and almond flour. Season with salt and pepper to taste.

Place in greased 5x9 loaf pan, or form into a loaf and place in greased 9 x 13 baking dish. 

In a separate bowl, combine Swerve brown (optional), mustard, and ketchup. Mix well. Pour over meatloaf.

Bake at 350°F for 50 minutes to 1 hour, or until internal thermometer reaches 155°F. Let rest 5 minutes, then slice. Serve with mashed cauliflower.

Ground beef should reach an internal temperature of 160° F before consuming. We instruct you to remove the loaf from the pan at 155° F because the internal temperature will rise as the meatloaf rests.
