The BEST Filet Mignon, Ever
Season steaks with salt and pepper on both sides. Place on wire wack on baking sheet & leave at room temp for 30 mins.
Make the garlic-herb compound butter. Place all ingredients in a food processor & process until smooth.

Spoon onto a piece of plastic wrap
Form into a log shape and tighten both ends. Chill until firm.
Preheat the oven to 350°F. Transfer baking sheet with filet mignons to oven. Cook until the internal temp reaches preferred internal degree. See full recipe for more notes!
Remove steaks from the oven. Preheat a cast-iron skillet over high heat for 5 mins while steaks rest. Pat dry.
Place steaks in hot skillet & cook for 45 seconds.
Place 1 tbsp of butter on top of each filet. Cook another 45 secs, then flip once or twice as needed until steaks reach a rich brown color, 20-40 seconds.
Remove steaks from skillet & serve with more butter. ENJOY!
