The Best Shredded Chicken
Place chicken breasts in large skillet. Cover with chicken stock.
Add more chicken stock to fully cover the chicken breasts by 1".
Bring liquid to a boil, then reduce heat to a simmer. Cover & cook about 20-25 mins or until chicken reaches 161°F internally.
Remove from skillet, but reserve broth. Cut chicken into small bite-sized pieces.
Shred chicken with a fork, by hand, or with a hand mixer.
Stir in salt
Add the pepper
Add a little bit of chicken stock to the shredded chicken.
Stir until evenly combined. Enjoy!
