Sheet Pan Steak and Fries

Separate eggs. Place yolks in one small bowl and set aside egg whites. Beat yolks well with whisk or fork, then add to butter and stir.

Add cream and tarragon to egg mixture.

Stir well.

Microwave, uncovered, until just slightly thick. Stop every 20 seconds to stir. Do NOT continue microwaving after thickened.

Remove sauce from microwave and stir in vinegar and pinch of salt.

Toss potato wedges with oil and salt on sheet pan, move to one side.  Place steaks on other half of pan.

Preheat broiler. Season steaks liberally with salt & pepper.

Place under broiler, about 10" from heating element. Cook 5-8 minutes depending on temperature preference and thickness.

In between cooking, remove pan and flip steaks and potatoes. Return to broiler for remaining time.

Remove steaks from pan and place on cutting board to rest. Pour out any excess liquid. Use a spatula to spread out fries and return pan to broiler. Continue cooking until just browned, about 5 minutes.

Remove from oven, sprinkle with 1/4 cup Parmesan and 1 tbsp parsley. Enjoy!
