Peanut Butter Chicken

Mix the ingredients for the peanut butter sauce and set aside.

Cut the chicken into bite sized pieces and season with salt and pepper to taste.

Heat the olive oil and butter in a large pan over medium-high heat. Brown the chicken on both sides for 2-3 minutes.

Add the onions into the pan and cook until translucent.

Add the garlic and ginger and cook until fragrant about 1 minute.

Pour the peanut butter sauce into the pan and stir. Let the mixture simmer for 5-6 minutes, stirring constantly. Serve with rice and cilantro. Enjoy!
