Lemon Pepper Chicken

Preheat oven to 375°F. Layer lemon rounds in the bottom of a baking dish.Sprinkle salt on bottoms of chicken. Flip & place salted side down on top of the lemon slices.

Using a fork, mix together, softened butter, lemon pepper seasoning, salt (if using), & cayenne pepper in a small bowl until combined.

Rub butter mixture all over chicken. If using chicken thighs, place some butter mixture under skin.

Get the chicken nicely coated in the ebutter.

Bake chicken for 25 to 28 mins (for boneless chicken breasts) or 35 to 40 mins (for bone-in chicken thighs), or until internal temp reaches 161° F. Halfway through cook time, baste chicken with melted butter drippings from baking dish.

Remove chicken from oven and let rest 5 minutes. Internal temperature should rise to 165° F while resting.
