Lemon Butter Sauce

In small saucepan, melt 2 tbsps butter over med heat until melted and smells nutty. Don't burn!

Move from heat & transfer to small bowl. Wipe the saucepan clean.

Boil lemon juice with salt and pepper until it's about 1 tbsp.

Remove from heat and immediately whisk in 2 pieces of chilled butter.

Set over very low heat & whisk rest of butter, one piece at a time, to make thick creamy sauce.

Remove from heat & whisk in browned butter. Before serving, whisk in 1 tbsp water, 1/2 tsp at a time.
