Keto Lemon Bars

Preheat oven to 350° F. Line 8×8 baking dish with parchment paper, leaving enough parchment paper sticking up around the sides you can use as handles later.

Add the melted butter.

In large bowl, combine, almond flour, Swerve, salt, and lemon zest.

Stir and mix with fork until combined.

Transfer dough to baking dish.

Press dough evenly across bottom of dish and into all 4 corners.

It should be firmly packed like this!

Bake crust for 20 minutes. Remove from oven and let cool 10 minutes

While crust cools, mix together almond flour and Swerve in a large bowl.

Add the lemon juice.

Whisk together the lemon juice, Swerve, eggs, and almond flour until thick and combined.

Pour over cooled crust. Bake lemon bars for 25 mins, then remove from oven & let cool at room temp at least 30 minutes.
