Instant Pot  Potato Soup

Sauté bacon, and set aside. Remove all but 1/4 cup of the bacon grease.

Cook onion until translucent. Stir in garlic.

Add potatoes and chicken stock. Cover and cook. Quick release.

Whisk together cold cream and cornstarch until smooth.

In sauté mode, mash potatoes. Add slurry to pot.

Stir in sour cream, cheese, and bacon.

Ladle into bowls and top with desired toppings.
