Gluten Free Zucchini Bread

Preheat oven to 350F. In a large bowl, whisk the flour, sugar, baking powder, salt, cinnamon and nutmeg. Set aside.

In another bowl, whisk the eggs, coconut oil and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until combined.

Then fold in the zucchini and walnuts. Grease a standard loaf pan or line with parchment paper.

Pour the mixture into the loaf pan and bake 45-50 minutes. Enjoy!
