Fried Potatoes

Heat vegetable oil in a large skillet over medium heat.

Add in the potatoes in a single layer.

Sprinkle with half of the salt and pepper, then cover with lid and cook for 5-8 minutes.

Remove lid, flip potatoes, sprinkle with remaining salt and pepper. Cover and cook for 8-10 more mins.

Sprinkle with fresh thyme, cook for 1 minute then remove from heat and serve immediately. Enjoy!
